Egg Drop Chicken Soup Mee Sua - A Side Dish from Leftovers

Mee Sua need not always be the main and only dish in meals. There are people who like to have their rice meal accompanied by a bowl of light mee sua soup.
Today, I wanted to prepare Spicy Minced Chicken N Sweet Basil Rice for dinner and there were leftover chicken bones, chicken meat, onions. These were too good to waste and combined with the remaining 4 wilting stalks of spring onions + 1 egg inside my fridge, I could come up with a hearty Egg Drop Soup Mee Sua.

Relief the Spiciness!


Simple N Hearty Leftover Ingredients
Egg Drop Chicken Soup Mee Sua (Serves 2 - 3)
Main Ingredients
2 pieces Thin Mee Sua
2 chicken thigh bones
30g chicken thigh meat 
30g minced chicken breast meat
1 Egg (beaten)

Side Ingredients
30g White/Yellow Onions
1 knob ginger (sliced thinly)
3 stalks Spring onions (sliced thinly)
1 tsp Peppercorns

Seasonings
1 tsp Sea Salt
1 tsp Sesame Oil
0.5 tsp Grounded Pepper

Frying Condiment
2 tsps Grapeseed Oil for Chicken Stock preparation
2 tsps Grapeseed Oil for Egg Soup preparation

Steps (Chicken Stock)
1. Heat Grapeseed Oil in wok using medium flame 
2. Add Ginger slices and Peppercorns to stir fry till fragrant
3. Add Chicken Bones, Thigh Meat and Onions to stir fry for 3 minutes
4. Add in 4 China bowls of Water, cover and bring to boil for 10 minutes
5. Transfer everything + Sea Salt to a pot, cover 
6. Simmer stock in low heat for 30 minutes
7. Turn off heat and set stock aside in pot for 1 - 2 hours

Steps (Egg Soup)
1. Heat Grapeseed Oil in wok using medium flame
2. Add Spring Onions and Chicken breast meat to stir fry for 5 minutes
3. Pour in Chicken stock using sieve (set aside chicken thigh meat pieces)
4. Cover soup and bring to boil for 10 minutes
5. In the meanwhile, blanch Mee Sua in a pot of boiling water for 1 minute (Re-use stock pot)
5. Uncover wok, drizzle beaten egg slowly into boiling soup in circular motion
6. Add in cooked Mee Sua, chicken thigh meat pieces and Sesame Oil 
7. Stir and turn off heat. Sprinkle Ground Pepper over soup.
8. Serve Mee Sua Soup with Rice Meal!
