Invisible Papaya Soup Mee Sua - Mushroom Eggroll + Sweet Corn

Yesterday craved for Chicken Soup Mee Sua and had intended to cook it for my house guests today. However, Notti Mei texted me early this morning that we should go vegetarian instead (due to 15th day of Lunar Month). It shouldn't be too hard to plan something tasty and not too boring at the last minute. A nutritious papaya soup might be good. 
So I went grocery shopping for all the necessary ingredients but bought the wrong type of papaya home! Had bought the green one instead of the orange type. I need to turn it invisible...

Healthy Vegetarian Lunch!

Ingredients for the Invisible Papaya Soup
Mushroom Eggroll, Corn + Invisible Papaya Soup Mee Sua (Serves 2)

Main Ingredients

2 bunches Mee Sua
1/2 Green Papaya (cut chunks)
1 Sweet Corn (cut quarters)
1 Mushroom Eggroll (refer below)

Side Ingredients
1 knob Ginger (sliced thinly)
6 china bowls Water

Frying Condiment
1 tbsp Grapeseed Oil

Seasoning 
2 tsps Sea Salt
A few dashes White Pepper
2 tsps Sesame Oil (Optional)

Garnish
2 - 3 leaves of Lettuce

Mushroom Eggroll Ingredients
2 Eggs, 2 stalks chopped Spring Onions, 1 tsp Sea Salt, 2 dash White Pepper (Beat mixture)
2 Dried Mushrooms (soaked in hot water, stalks removed, sliced thin/chopped)

Steps
1. Heat wok with Grapeseed Oil, add Eggroll mixture
2. Spread egg evenly in wok, put dried mushrooms around sides of omelette
3. Roll the omelette as shown in picture above, transfer to a plate
4. Steam the plate of omelette for 10 minutes
5. Add and stir fry Ginger in the wok
6. Add in Sweet Corn and Papaya chunks, stir fry for 1 minute
7. Pour in Water, cover wok with lid and simmer in low heat for 20 minutes
8. Use ladle to mash up softened papaya inside the wok
9. Add Sea Salt and White Pepper, cover and simmer for another 10 minutes
10. Blanch Mee Sua in a separate pot of boiling water for 1min, transfer to a serving bowl
11. Transfer Sweet Corn from the wok into the serving bowl
12. Pour rest of the soup into the serving bowl through a sieve
13. Put steamed Eggroll onto the serving bowl, and drizzle Sesame Oil over soup
14. Garnish with Lettuce and Serve!
