I couldn't stop thinking about vegetarian dishes lately, especially after going to the Singapore Zoo and saw the animals brimming with life. And last week I was watching an episode of Anthony Bourdain's travel show on TV and saw how a live pig was being slaughtered then served onto people's plates. Of course, most of us usually wouldn't be able to see such things in our daily lives so that makes it easier to eat meat without thinking too much. Even though I wouldn't be able to turn vegan, not in a short span of time, at least I'm more aware of what I'm eating now and would try curbing my meat-cravings.
So, here is another delicious vegan dish that I want to share with all readers. Scallion Pancakes; It is not boring, not difficult to cook, and very tasty to eat! For non-onion lovers, do not worry as you will not be able to detect the usual bitter and stingy taste nor texture. ;) This recipe uses a mixture of wholemeal flour and self-raising flour to make the dish more healthy. Hope you will want to try cooking it one day too!
Scallion Pancake Wedges
The Ingredients and Steps for Scallion Pancake Wedges
Serves 8 Whole Round Layers |
Scallion Pancake
1 Cup Wholemeal Flour
1 Cup Self Raising Flour
1 Cup Warm Water
1 Stalk China Scallion (cut into 1-inch thin slices)
2 Tbsp Sesame Oil
1 Pinch Salt and some Ground White Pepper (combined)
Dip Sauce
Young Ginger (cut into thin strips)
1 Tbsp Light Soy Sauce
1 Tbsp Black Vinegar
Frying Condiment
2 Tbsp Healthy Oil
Steps for Pancake Dough
1. Combine Wholemeal flour, Self Raising flour & Water in a mixing
bowl

Knead for 10min into a dough until smooth, put in damp bowl & cover
with a wet cloth for 30 mins
3.
After 30mins, roll dough into cylindrical shape
about 1 inch thick
4. Cut the rolled dough into eight 1.5-inch long pieces, then roll into balls

Flatten each dough ball, roll into a thin round layer with rolling pin
6.
Brush the top of each rolled dough piece with a layer of sesame oil
7.
Sprinkle a pinch of salt & pepper mixture, then chopped scallions on top

Lift an edge of the dough piece and roll into cylindrical strip.
9. Form each dough strip into a flat coil,
10. Roll each dough coil into a flat pancake (about 3mm thick) with rolling pin
Steps for frying Pancake
1. Heat Oil in a pan using medium-low heat

Gently place one pancake dough in the pan
3.
Fry gently for about two minutes on each side until golden brown.
4. Drain fried pancake briefly on a paper towel.
5.
Cut cooked pancake into wedges.
6. Repeat Steps 1 to 5 for the rest of the pancake doughs
7.
Serve HOT with a dipping sauce
