Fried Carrot Cake Cubes with Minced Pork and Vegetables


I was telling a friend the dinner that Uncle Niu bought. It was 炒年糕 (Stir Fried Rice Cakes).  Halfway through the conversation, images of carrot cake kept flashing through my mind. It made me wonder if I could cook carrot cake the same way as those rice cakes too other than the usual methods of steaming and plain frying. Perhaps I could try using a more interesting and healthier way of cooking this delectable food. 
After discussing with my friend, we came up with 1 method of cooking this dish with 2 ways to eat it. Take a look at the pictures below and you can decide which of the 2 ways is more yummy and fun! ;)


Fried Carrot Cake Cubes with Minced Pork and Vegetables

The Ingredients Used

Serves 2 - 3 
Main Ingredients
½ Ready Made Carrot Cake (Cut into Cubes)
100g Minced Pork
2 Black Mushroom (Cut into Strips)
50g Jiu Cai (Cut into 1 inch Long) 
20g Black Fungus (Cut into Strips)
1 Chilli (Cut into Strips for Garnish)
1 Egg (Beaten)

Seasoning
3 tsps Tsp Light Soya Sauce
1 Tsp Cornflour
A few dash of pepper

Frying Condiment
2 tbsp Grapeseed Oil

Steps
1. Marinate Minced Pork with 1 tsp Light Soya Sauce & 1 tsp Cornflour
2. Add pepper and 1 tsp Light Soya Sauce into beaten Egg,  
3. Coat Carrot Cake cubes into Egg mixture
4. Heat Oil in pan using medium-low heat, add Carrot Cake cubes and pan-fry till light brown. 
5. Remove fried Carrot Cake cubes from pan, set aside on oil absorbent paper for later use
6. Stir-fry remaining Egg mixture, Minced Pork, Black Mushroom, Black Fungus, and Jiu Cai in the pan
7. Add 2-3 tsps of water, and 1 tsp of Light Soya sauce, simmer ingredients in pan for 3 mins
8. Add in the fried Carrot Cake Cubes and lightly mix into the other ingredients
9. Serve contents onto plate and garnish with Strips of Chilli. Enjoy your snack hot!

*** The other version is almost the same, just omit Step 8 and directly serve pan contents onto the plate of fried Carrot Cake cubes.
