Minced Pork N Fishball Noodles (Dry) - Slurpz!

It had been raining for the past few days and almost everyone seemed rather happy that the heatwave was gone. However, the rain hampered a few of my plans over the past week including satisfying my craving for minced meat noodles at an eatery in Fortune Centre. So I decided to cook it myself tonight.

Craving Fully Satisfied!
Simple and Short
Minced Pork N Fishball Noodles (Dry) - Serves 2
Main Ingredients
200gm Minced Pork / Chicken / Beef (Marinated**)
6 Fresh Fishballs
2 bunches Dried Egg Noodles

Side Ingredients
4 cloves Shallots (sliced thinly)
2 cloves Garlic (minced)
4 stalks Spring Onions (separate white and green part, slice thinly for each)
1 stalk Chilli Padi aka Bird's Eye Chilli (sliced thinly)

**Meat Marinade
2 tsps Light Soy Sauce
2 tsps Cornflour
1 tsp Rice Vinegar / Wine Vinegar
2 tsps Sesame Oil
2 dashes of Ground White Pepper

Meat Sauce
2 tsps Abalone / Oyster / Hoisin Sauce
2 tsps Black Pepper Sauce
1 tsp Dark Soy Sauce
1/2 chinabowl Water

Seasoning Condiment
2 tsps Sesame Oil (1 tsp for each serving bowl)

Frying Condiment
1 tbsps Grapeseed Oil

Steps
1. Mix Shallots, Garlic, Spring Onions(White Part) together. [A]
2. Heat Grapeseed Oil in wok using medium flame 
3. Add Mixture [A] and stir fry till fragrant
4. Add marinated Meat (I use Pork) and stir fry for 3 minutes
5. Add Meat Sauce and coat Meat evenly
6. Turn heat to low, cover wok and simmer for 5 minutes
7. In the meanwhile, boil a pot of water, add Fishballs and blanch Egg Noodles till soft
8. Drain Noodles and wash in tap/cold water
9. Transfer Noodles and Fishballs to serving bowls, season with Sesame Oil
10. Stir Meat inside wok to coat sauce evenly again, switch off heat
11. Top Noodles with Meat and gravy
12. Garnish with Chilli Padi and Spring Onions(Green Part)
13. Mix thoroughly and have fun slurrrrping!
