Oriental Pineapple Chicken Pizza - Sweet Day

I was craving for pizza and yet not the usual types. An oriental pizza will be special. Perhaps I could use the leftover tortilla wraps, chicken meat, frozen mixed vegetables, and a slice of pineapple in the fridge. These remind me of one of my favourite foods, Thai Pineapple Rice. Stir frying may be necessary to bring out such a flavour. 

A Crispy Oriental Pineapple Chicken Pizza



The Ingredients

Ingredients for Oriental Pineapple Chicken Pizza (Serves 2)

(A) Ingredients (Stir Fry solids)

1 clove Garlic (minced)
1/2 Yellow onion (thinly sliced)
1 tbsp Frozen mixed veg
100gm Chicken fillet strips (slice into about 1cm wide, 4cm long)
1/2 slice Pineapple (cut into bite size pieces)
1 tbsp Cashew nuts *optional 
1 tbsp Coriander (finely chopped)

(B) Ingredients (Stir Fry liquid)
Pineapple Juice (use remaining 1/2 slice of pineapple)
2 tsps Fish Sauce
2 tsps Plain curry powder

Ingredients (Pizza topping)
2 tbsp Mozzarella cheese (grated)

Ingredients (Garnishing)
1 tbsp Spring Onions (finely sliced)
1 tbsp Red Chilli (finely sliced)

Steps
1. Heat wok with Oil using medium heat 
2. Add (A) ingredients in listed order to stir fry, until chicken is cooked. 
3. Next, add (B) ingredients to taste
4. Sprinkle some mozzarella cheese on tortilla wrap, 
5. Evenly spread wok-cooked ingredients onto the wrap
6. Sprinkle remaining mozzarella cheese evenly over the ingredients
7. Preheat toaster (set to 15 minute) 
8. Put pizza into the toaster during last 5 minutes of timer
9. Garnish the Pizza with Spring Onions and Red Chillies
10. Serve and Enjoy!
