Fried Fish Slices N Sesame Salad Soup Mee Sua

The hot weather has been torturing lately and by eating heavy foods like chicken, pork, lamb and beef only made my body even more uncomfortable. The alternatives would be to eat fish, eggs and soy to get the protein I needed for the many activities planned. What fish recipe would be nice to last me through the day?

Fish soup is an excellent and popular choice for lunch with many locals and the fish would usually be available boiled or fried. I usually ordered fried fish soup at hawker centres or coffeeshops as the soup would be more tasty and fragrant. However, the oil used by the hawkers to fry the fish are usually the cheaper and more unhealthy ones which would result in alot of unwanted calories and cholesterol. So it would be healthier to choose the boiled fish version while at work.

As this recipe was cooked at home, the oil and salt used were healthier and in moderation. In addition, celery and ikan bilis were used for the soup base instead, helping to control cholesterol levels. A sesame salad made from vegetables and egg was added as side dish garnishing, giving more flavour and nutrients to this dish than the usual plain boiled greens.

Yummy Fried Fish Slices and Sesame Salad Soup Mee Sua!


The Ingredients Used

Serves 1 - 2
Main Ingredients
200gm Mackerel (batang) (cut into 1cm thick slice)
2 bunches Mee Sua

Soup Base
2 Stalks of Celery (cut into big chunks)
1 tbsp of Ikan Bilis
2 tsps Light Soy Sauce

Sesame Salad Ingredients
Carrot (Shredded)
2 tbsp Beansprouts
2 stalks of Spring Onion (cut into 1 inch long)
1 Egg Omelette (Cut into Strips)
2 tsps Sesame Oil
1 pinch Sea Salt

(A) Seasoning Condiments for Fried Fish
1 Tsp Light Soya Sauce
A few dash of Ground White Pepper

Frying Condiments
1 tsp Cornflour
2 tbsps Grapeseed Oil

Steps
1. Marinate the Fish slices with (A) for 10 minutes
2. Heat 2 tbsps Grapeseed Oil in wok using medium low heat 
3. Coat marinated Fish slices with Cornflour
4. Add coated fish slices into wok to fry till cooked and lightly browned, drain on oil absorbent papers, set aside
5. Remove excess Oil and solids from wok till left about 2 tsps of Oil inside the wok
6. Heat Oil in wok using medium flame
7. Add Ikan Bilis and fry till crispy light brown
8. Add 4 chinabowls of water and Celery into the wok to boil for 10 minutes using med-high heat
9. Add Light Soy Sauce to season the soup stock, turn off heat and rest it in wok for 15 minutes
10. Aside, put Sesame Salad Ingredients in a small bowl and mix well
11. After 15 minutes rest, turn wok heat to medium again, remove Celery pieces from wok 
12. Transfer Fried Fish into wok, boil for 5 minutes
13. Blanch Mee Sua in a separate pot for 20 seconds, transfer to wok and stir well
14. Switch off wok heat, transfer everything equally into 2 big bowls 
15. Garnish dish with Sesame Salad and Serve with your favourite dip sauce!
