Avocado N Peach Yoghurt on Biscuit - Stomach Soothing

Lately my friend, S, tried baking cheesecakes and while looking at her recipe, I had craving for the bottom crust of the cheesecake. It was rather odd, just that I have never fancied cheesecakes except for the crust below. So I thought of making a snack out of such a crust someday, and no baking would be needed. No cheesecake for me though... at the moment.

Anyway, today I needed something to soothe my stomach from the Chicken N Duck Yoghurt Rendang dinner, so a fruity and smooth dessert would be great. I bought some avocados, peaches, and lemons a few days back and now they would come in handy! I mixed them with the un-used yoghurt bought for the rendang meal and topped the creamy mixture onto the biscuit crust.

This dessert was really easy to make and settled my stomach from the spiciness of the curry almost immediately. It tasted sweet too and I made two versions for us to choose from.

The Ingredients Used for Biscuit Crust

Makes about 6 Crusts (6 cm in diameter, 0.5cm thick)

Ingredients
8 Digestive Biscuits (Sweetened)
2 tbsps Olivio or Butter

Steps
1. Crush Digestive Biscuits in a plastic bag using a dough roller
2. Add crushed biscuits and Olivio / Butter into a bowl and mix well
3. Line the base of 3 small plastic bowls / or moulds with plastic film wrap
4. Lay biscuit mixture onto base of the bowls and shape well into circles of 0.5cm thick each
5. Wrap plastic film wrap over the biscuits, chill in the fridge for at least 6 hours till harden

The Ingredients Used for Avocado N Peach Yoghurt Topping

Makes enough to top 6 crusts (mentioned above)

Ingredients
1 Avocado
100 gm Low Fat Yoghurt
1 Peach
1 tbsp Honey
1/2 Lemon

Steps
1. Steam the Avocado for 15 minutes
2. Slice open the steamed avocado, remove the seed, scoop pulp into bowl and mash till creamy
3. Add Yoghurt and Honey to mix evenly with avocado cream
4. Squeeze juice from Lemon into the avocado yoghurt mixture, stir well
5. Chill mixture in fridge till serving time
6. Before serving time, peel and pitt the Peach, chop half into small pieces, remaining half into big chunks
7. Mix small Peach pieces into chilled Avocado Yoghurt mixture
8. Put mixture onto biscuit crusts, and top with big Peach chunks
9. Serve your dessert!
