Bittergourd & Cucumber Chicken Gravy Mee Sua - Cool the Summer Heat

Hot Hot Summer heat!! What is best eaten to cool the body down? Cucumbers & bittergourds are known for relieving of body heat so... let's do it with mee sua and chicken! 
Below is a recipe that was cooked and eaten some time early last week when fan and aircon couldn't even do a good job chasing heat off permanently... It was good and made me feel chilled and healthier for that day. I hope that this works for you too.

The Cool Dudes
Bittergourd & Cucumber Chicken Gravy Mee Sua (Serves 3)
Main Ingredients:
1/2 Bittergourd (Sliced)
1 Chicken Drumstick (Deboned & cut) / Chicken breast meat may be used as alternative
1 Cucumber (Cut strips)
3 Mee Sua (Soaked in water for 5min and drained)

Side Ingredients:
1 handful Beansprouts 
1 Egg Omelette (Cut strips)

Flavouring Ingredients:
1 clove garlic (Minced)
1/2 Tsp Sea salt
1 Tbsp Dark Soy Sauce 
1 Tbsp Beanpaste (Either White or Black)

Frying Condiment:
1 Tbsp Grapeseed Oil

Steps:
1. Heat the Oil in wok then stir fry the garlic
2. Add in Bittergourd & Chicken to stir fry
3. Add Water, Dark Soy Sauce, & Sea Salt 
4. Simmer till bittergourds are soft and chicken turns brownish 
5. Blanch Mee Sua in separate pot of boiling water for 20 sec and drain onto bowl
6. Pour ingredients and gravy in the wok over the meesua in the bowl
7. Serve and enjoy!
